Asian Quinoa Salad
Serves: 4
  1. In a medium sauce pan, bring water and quinoa to a boil. Cover, and reduce heat to Low. Let quinoa cook for about 15-20 minutes, until liquid is absorbed. Remove from heat, stir and let rest uncovered for 5 minutes.
  2. Place quinoa into medium mixing bowl.
  3. Add mandarin oranges, chopped apples, and cilantro.
  4. Pour Sesame Ginger dressing over mixture and gently stir until combined. Add salt to taste.
  5. Pour into serving bowl to serve warm, or chill for an hour and serve cold.
- This quinoa dish will hold up well for up to four days covered and refrigerated.
- Serve as a warm side dish or chilled as a healthy salad.
- Add a tablespoon of Sesame Ginger dressing to freshen a chilled salad. Quinoa tends to absorb liquid.
