Brown Sugar Shortbread
Makes approximately 2 dozen
  1. Preheat oven to 325 degrees F.
  2. Cream butter, brown sugar and almond extract until fluffy. Add salt and flour and mix well.
  3. On a lightly floured surface, roll dough into a ½" thick rectangle. Cut into 1-1/2" x 2-1/2" rectangles.
  4. Place cut dough onto parchment paper lined baking sheets and prick with a fork.
  5. Bake for 20 to 25 minutes or until light golden brown.
  6. Cool completely. Serve alone or with fresh berries and whipped cream.
