Coconut Pudding
Serves: 4-6
 
Ingredients
Instructions
  1. Combine sugar, corn starch and salt in a medium saucepan, whisk to break any lumps.
  2. Gradually whisk in coconut milk and 2% milk. Add butter.
  3. Stir constantly over Medium heat.
  4. Bring to boil and stir for one minute.
  5. Remove immediately from heat.
  6. Stir in vanilla.
  7. Pour into individual bowls and serve warm or refrigerate to serve chilled.
Option 2: Chocolate Coconut Pudding
  1. Follow steps 1-6 above.
  2. Immediately stir in ⅓ cup dark or milk chocolate pieces.
  3. Stir until chocolate is completely melted.
  4. Pour into individual bowls and serve warm or refrigerate to serve chilled
Option 3: Coconut AND Chocolate Layered Pudding
  1. Follow steps 1-6 above.
  2. Pour half of the coconut pudding mixture into individual bowls, cover and refrigerate.
  3. Immediately stir in 1 ½ tablespoons of dark or milk chocolate pieces to remaining pudding.
  4. Cover and refrigerate chocolate pudding in small bowl for 30 minutes.
  5. Spoon chocolate pudding on top of the coconut pudding. Enjoy
Notes
- Garnish with a shortbread cookie on the side of each pudding bowl.
- Top with whipped cream, if desired at serving
