Coconut Rice
Serves: 2
  1. In a small sauce pan, bring coconut milk, water, and rice to a boil, stir gently.
  2. Cover pan, immediately turn to Low heat
  3. Cook covered about 35 minutes, until liquid is absorbed.
  4. Remove from heat, stir to fluff rice, and let sit uncovered for three to five minutes.
- This rich and fragrant rice pairs well with seafood or chicken. Add vegetables of choice.
