Gluten Free Basic Muffin Recipe
Serves: 24
  1. Preheat oven to 350ºF.
  2. In a medium bowl whisk flour, baking powder, salt and baking soda.
  3. In a large bowl mix butter, sugar, sour cream, eggs and vanilla until smooth.
  4. Add flour mixture to butter mixture. Blend until moistened.
  5. Add optional flavors if desired (see below). Stir slightly.
  6. Fill 24 count greased or lined muffin cups about ⅔ full. Bake at 350o for 12-15 minutes, or until toothpick comes out clean.
  7. Cool muffins for a few minutes then remove from the pan.
Optional Flavors
- Lemon Blueberry: add 1½ cups blueberries and 2 tablespoons of lemon zest
- Cranberry Orange: add 2 cups dry sweetened cranberries and 2 tablespoons orange juice
