Gluten Free Corn Muffins
Serves: 12
  1. Preheat oven to 400ºF.
  2. In a medium bowl, combine Gluten Free Baking Flour Blend, corn meal, sugar, salt, baking powder and baking soda. Mix together with a fork.
  3. In a medium bowl, combine the eggs, oil and milk. Stir well.
  4. Gradually add the wet ingredients to the flour mixture. Mix until well blended.
  5. Fill 12 lined muffin tin cups ⅔ full.
  6. Bake 12-15 minutes, or until they are slightly brown on top.
  7. Allow to cool slightly before serving.
