Gluten Free Vegan Pie Crust
Makes One 9" Pie Crust
  1. In a large mixing bowl, combine flour, sugar, and salt. Stir to combine.
  2. Slice butter into several pieces and work into flour mixture with a fork or pastry cutter until ingredients are a course, mealy texture and butter is about pea sized.
  3. Gradually add 1 tablespoon of cold water, stirring to incorporate the butter and flour to form soft dough. Continue adding water by the tablespoon until dough is soft enough to form, but not too wet.
  4. Shape the dough into a flat disk, about ½ inch thick.
  5. Wrap dough in plastic wrap and chill for about 30-60 minutes.
  6. When ready to use, let dough warm at room temperature for about 5 minutes, until soft enough to roll, but still cool enough to be firm.
  7. On a large piece of waxed paper, plastic wrap, or silicone baking mat, lightly flour surface with remaining 2 tablespoons of flour and place dough.
  8. With a rolling pin, roll dough into about an 11-12 inch circle. Place pie pan over dough and flip wax paper, plastic wrap or flexible baking mat over top of pan, allowing the dough to softly glide into the pie pan.
  9. Shape and press dough into bottom and around edges of pan, crimping crust gently over top rim of pan.
  10. Fill with choice of pie filling and bake according to filling recipe instructions.
