Vegan Pumpkin Pie


Vegan Pumpkin Pie
Serves: 8
  1. Pre-heat oven to 350 degrees
  2. In a medium bowl, pour in coconut milk and stir until well combined. Set aside.
  3. In a large mixing bowl, combine pumpkin, coconut milk, sugar, maple syrup and vanilla.
  4. Stir together until well blended.
  5. In a small bowl, combine tapioca starch, cinnamon, ginger, and nutmeg. Stir.
  6. Add spice mixture into pumpkin mixture. Stir until well blended.
  7. Pour pie filling into unbaked pie crust.
  8. Bake at 350 degrees for 55-60 minutes.
  9. Let pie cool before cutting, and serve at room temperature, or chill for several hours before serving.
  10. Garnish pie with choice of whipped topping.
