Warm or Chilled Lentil Salad with Feta and Vegetables

Ingredients
Instructions
  1. In a medium saucepan, cook lentils according to package directions, until soft.
  2. Drain cooked Lentils into colander.
  3. In a large skillet, cook red bell pepper, carrot, celery, and onion until soft. Remove from heat, set aside.
  4. In a large bowl, combine cooked lentils & vegetables.
  5. In a medium bowl, combine ingredients for dressing; stir and pour over the cooked lentils and vegetables.
  6. Fold in fresh, chopped cilantro.
  7. If serving warm, top with crumbled Feta Cheese and serve immediately.
  8. If serving chilled, place mixture in refrigerator until ready for serving. Top with Feta cheese and serve.
Notes
- Dressing can be made one week ahead and stored in refrigerator.
- Substitute homemade dressing with ½ cup of Natural Directions Organic Balsamic Vinaigrette Dressing.
